Cocktail of the week: Caravan’s clarified coffee and amaretto milk punch – recipe
A festive punch of coffee, white chocolate, coconut milk and amaretto
Inspired by our global travels and love for coffee, this punch, which combines coffee with white chocolate, coconut milk and amaretto, is an indulgent affair created for our new restaurant in Covent Garden. It’s easily upscaleable for a Christmas crowd, too.
Clarified coffee and amaretto milk punch
Serves 4
For the punch
60ml amaretto
60ml coffee liqueur
200ml brewed espresso – we use our Daily Blend
60ml lemon juice
For the milk
60g white chocolate
180ml coconut milk – the type you cook with, not barista-style coconut milk
Put all the punch ingredients in a bowl and stir gently to combine.
Pour the coconut milk into a medium saucepan on a gentle heat, then add the white chocolate and stir until melted.
Slowly and gently incorporate the punch mix into the coconut milk pan, then take off the heat and leave to rest for 15 minutes. Strain the hazy punch mixture through coffee filter paper into a jug – it will slowly drip through, leaving a clear and silky-smooth cocktail.
Chill in the fridge, then serve in rocks glasses, either straight up or over ice.
